This wine is made from Shiraz grapes that have been left to ripen on the vine for a longer period to achieve a higher concentration of sugar. The grapes are hand harvested, crushed and then begin fermentation. Part way though fermentation, the Shiraz juice is drained off and fortified with brandy and SVR spirit. It is then transferred to old French oak barrels in our Solera for up to 12 years. The Solera is located in our historic ‘old cellar’ which is not air conditioned and the warmer ambient conditions allow the wine to concentrate in flavour and in sugar. We periodically draw Liqueur Shiraz off this Solera to be bottled.
This wine is blended from a number of different vintages of fortified Shiraz made from fruit off our vineyards in the Hunter Valley. Made to reflect a style that is rich in flavour and complex.

Deep brick red to tawny brown in colour.
An intense, lifted nose of raisins and christmas cake with a toffee, caramel note.
The palate is smooth and luscious with flavours of raisins and toffee. The mid palate sweetness is balanced by alcohol and acid which leave the wine finishing dry.
